Enjoying Warm Coconut Milk

I'm warming up tonight with this delicious coconut drink - it is just perfect for my pre-bedtime drink (and maybe be a better choice than a Skim Hazelnut Latte)


What you need (serves 2):

2 cups rice milk
3/4 cup flaked coconut
2 teaspoons raw sugar
pinch ground nutmeg or cinnamon

What to do:

Combine milk, coconut and sugar in a saucepan over low heat. Heat for 5 minutes or until milk nearly boils. Stand for 2 minutes.

Strain through a sieve, pressing with the back of a spoon, into a heatproof jug. Discard coconut pulp. Pour into warmed glasses. Top with nutmeg/cinnamon. Serve.
