A Happy Moment: Oatmeal Pancakes served with Blueberries and Maple Syrup

When life throws me a few tough moments, I always find its best to surround myself with my favourite or enjoyable things! Or create happy moments to replace the tough or sad moments! Making (and eating) Oatmeal Pancakes became one of those happy moments! I was the mixer, my boy the cooker and together we made the most amazing alternative to a dinner meal at the end of a tough day...


WHAT YOU NEED:

2 cups rolled oats
¾ cup whole wheat flour
4 tablespoons honey
1 cup milk
2 eggs, lightly beaten
90 g butter, melted

WHAT TO DO:

Place 2 cups of the rolled oats, flour and sugar into a blender, and mix for a few seconds.
Add milk, eggs and butter to blender and mix for another few minutes until smooth.
Leave covered with plastic wrap for 10 minutes.
Heat a little butter in a non-stick pan.
Pour around ¼ cup of mixture into pan.
Cook the pancake over low heat for one minute or so, before turning over to cook the other side.
Place cooked pancakes on a plate and cover with a teatowel to keep warm. Serve with maple syrup and blueberries.

Serves: 4-6 medium pancakes
Preparation time: approx. 30 minutes
