Avocado & Coconut Creamsicles


Here’s the recipe for 8 ice creams…(However, I halved the recipe as I only had 4 ice cream molds!)

Ingredients:

2.5 avocados
The flesh of 2 baby coconuts (save the water for later or replace rice milk with coconut water)
The juice of 2 limes
1/2 cup of rice milk (or soy, almond, regular milk)
2 tablespoons of raw honey
1/2 teaspoon of salt
1/2 tablespoon of chia seeds or flax seeds

To make:

Simply throw all your ingredients into a food processor, blender, or bowl for a hand-held whizzer. Beat to a nice creamy liquid and spoon mixture into your ice cream molds. Pop in freezer overnight (or for a minimum of 4 hours) and eat when you’re craving a naughty snack! healthy and delicious!
