Do You Start Your Morning With A Green Smoothie...If Not, Then I ThinkYou Should!

Do you ever find it challenging to eat all of your recommended daily servings of fruits and vegetables each day? Sometimes I do. And, I admit it. I’m a little late to the game on this one. For years I’ve been hearing people talk about adding greens like kale or spinach to their morning smoothies, saying, “You don’t even know it’s in there.” Well, I didn’t buy it. Until, I tried it. Now, greens are a regular feature in my morning smoothies.


Here are a few of my favourite blends...

Spinach Smoothie With Avocado and Apple

What You Need:

1 1/2 cups apple juice
2 cups chopped spinach or kale
1 apple—unpeeled, cored, and chopped
1/2 avocado, chopped

What To Do:

Blend the apple juice, spinach, apple, and avocado in a blender and puree until smooth, about 1 minute, adding water to reach the desired consistency.

Kale Smoothie With Pineapple and Banana

What You Need:

1/2 cup coconut milk
2 cups chopped kale or spinach
1 1/2 cups chopped pineapple (about 1/4 medium pineapple)
1 ripe banana, chopped
1/2 cup water

What To Do:

Blend the coconut milk, water, the kale, pineapple, and banana in a blender and puree until smooth, about 1 minute, adding water to reach the desired consistency.

Green Smoothie Mash Up

What You Need:

1 cup fresh or frozen berries
2 cups chopped kale or spinach
1 ripe banana, chopped
1 orange, chopped
1 cup coconut water
1/4 cup almonds, chopped

What To Do:

Blend the coconut water, the kale, orange, berries, almonds, and banana in a blender and puree until smooth, about 1 minute, adding more coconut water to reach the desired consistency.

My Go To, Standard, Tried and Tested Green Smoothie

What You Need:

1 cup fresh or frozen berries
2 cups chopped kale 
1 frozen banana, chopped (peeled before frozen)
1 tablespoon aloe vera juice
1 tablespoon liquid chlorophyll 
1 cup coconut water
1 tablespoon chia seeds
1 tablespoon mixed nuts

What To Do:

Blend the coconut water, chlorophyll, aloe vera, the kale, berries, chia seeds, nuts, and banana until smooth, about 1 minute, adding more coconut water to reach the desired consistency.

Pomegranate Citrus Crush

What You Need:

2 cups spinach, fresh
1 cup orange juice 
1 cup water
1 cup pomegranate seeds
1 banana

What To Do:

Blend the water, orange juice, the spinach, pomegranate seeds, and banana until smooth, about 1 minute, adding more water to reach the desired consistency. If you have two fresh oranges, feel free to add them to blender rather than the orange juice.

Green Chocolate Covered Cherry

What You Need:

2 cups spinach, fresh
2 cups almond milk, unsweetened
2 cups cherries, pitted
2 bananas
1 teaspoon cinnamon
3 tablespoons cacao powder

What To Do:

Blend spinach, almond milk, cherries, cinnamon, cacao powder, and bananas until smooth, about 1 minute, adding more milk to reach the desired consistency. 

** Bonus tips **

- Use at least one frozen fruit to make the green smoothie cold. Or lots of ice cubes. 

- If you make a batch of smoothie, it’ll keep for a couple of days in the fridge – just make sure you cover it. This’ll save you time on mornings where you were supposed to be at work when you were just crawling out of bed. I pop mine in glass mason jars and make sure I have a pretty straw to go with. 

- Depending on the strength and power of your blender (aka the green smoothie's bff) ...for easy blending, place the liquid in the blender first, then the greens. Fruit and other vegetables should go in last.

Healthy Way to a Spend a Rainy Saturday...Making Homemade GranolaandRaw Energy Balls

Let's just face it friends. Every so often you've just gotta make something healthy. Or semi-healthy. Or just plain sugary like salted caramel and berry pavlova for example.

But today we are going with the healthy option...

Granola is one of my favorite things to eat for breakfast after a morning workout. A yummy, healthy, and filling treat, with some yogurt and berries or bananas on top?

It's been on my list of things to make (along with an iPad full of other things) for a long time! So when I saw this recipe on Pinterest I decided to give it a shot, adjusting it just a little.

I just love how adaptable granola is! You can use a variety of nuts, dried fruit, and spices. I'm already thinking of different combinations for next time. I made mine with a little bit of chia seeds, sunflower seeds, pumpkin seeds and coconut.

You can eat the granola for breakfast (or lunch/dinner/dessert)  with some yogurt, fruit, on top of cereal, or… Just eat it the good 'ol fashioned way- with milk.

Homemade Granola



What You Need:

4 cups rolled oats 
1/2 cup nuts, roughly chopped (I used pumpkin and sunflower seeds)
1/2 cup of shredded coconut
2 tablespoon chia seeds
2 tablespoon olive oil 
1/2 teaspoon salt
1/4 cup honey
1/4 teaspoon cinnamon
1 teaspoon vanilla

What To Do:

Mix it all together. Bake on a greased cookie sheet for 1 hour at 150º C, stirring every 15 minutes. Store in an airtight container.

Makes: 2 Trays

Now I'm not sure if some of you suffer from the same 3pm crash as I do, but it's never a good thing when 3 hours after having a healthy lunch, you feel the need to be search through your desk drawer for an reminents of a sugary snack or loose change to go raid the vending machine! Now lucky for me, I have more will power than that, but I do find myself struggling to get the energy sometimes after a long days work to slip into my gym clothes and head for a workout, especially without having anything to eat or drink as a pick me up. Im sure you think it's a simple solution, you probably thinking in your head "Girl, just buy yourself some fruit or a musli bar?!" Well I've decided to do one better! Make myself some Raw Energy Balls!  Trust me after one delicious bite, you'll realise (as I did) that they were basically a healthy version of my favorite no bake cookies! And they’re perfect for breakfast, snacks, or even — dessert!

Homemade Raw Energy Balls


What You Need:

1 cup rolled oats
2/3 cup shredded coconut 
1/2 cup peanut butter
1/2 cup ground flaxseed
1/2 cup chocolate chips or cacao nibs
1/3 cup honey
1 tablespoon chia seeds 
1 teaspoon vanilla extract

What To Do:

Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.

Once chilled, roll into balls of whatever size you would like. (Mine were about 1" in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.

Makes: 12 balls

Fresh Berries and Salted Caramel Pavlova

I’ve eaten lots of pavlovas over the years, after all I am Australian and the egg white, sugary goodness mixed with the cream and fresh fruit is pretty much equally as important as the Christmas Tree is for Christmas Day. But can you believe in my 28 years and the endless recipe experimentations...I have never actually made a Pavlova! Until now! For all those who think they make the best Pavlova in your family, or who have made it so many times for Christmas or Australia Day, that you don't even need the recipe. I have a slightly updated version and it's a total winner and totally delicious...

Fresh Berries and Salted Caramel Pavlova



What You Need:

Pavlova

6 egg whites
350 gms caster sugar
1 tbs white balsamic vinegar
1 tbs cornflour, sifted
50g icing sugar, sifted
600 mls thickened cream
500 gms mixed fresh berries – raspberries, strawberries, blackberries and blueberries work well.

Salted Caramel

550 gms caster sugar
300 mls thickened cream (at room temperature)
1/2-1 tsp sea salt flakes, to taste

What To Do:

Preheat oven to 150 degrees C, non fan-forced. Line a large baking tray with baking paper.
Place egg whites in the clean, dry bowl of an electric mixer and whisk on high speed for 3-4 minutes to soft peaks.

Add caster sugar, 1 tablespoon at a time, allowing each to be incorporated before adding the next, whisking until mixture is glossy. Reduce speed to low, then add balsamic vinegar, cornflour and icing sugar, beating to combine.

Spread mixture over the baking paper in a round or oblong shape, fairly high, making a slight indent in the centre. Reduce oven to 125-130  degrees C depending on how hot your oven is, and bake pavlova for 1 hour. Turn off oven and leave meringue in the oven, with the door ajar, for 1-2 hours until cooled completely.

Remove from oven and place on a serving plate or board.

For the salted caramel, combine sugar with 125 mls water in a saucepan over low heat, stirring until sugar dissolves. Increase heat to medium and cook, without stirring, occasionally brushing down the sides of the pan with a damp pastry brush, for 8-10 minutes until a golden caramel forms.

Remove from heat and pour in cream – be careful, as mixture will bubble fiercely. Return saucepan to low heat, add salt to taste and cook, stirring, for 1-2 minutes until smooth.

To serve – whisk cream to soft peaks, then spread over pavlova. Scatter over berries. When ready to serve, drizzle with the salted caramel that has been gently warmed.

Perfect Quick Side Dish to Any Meal- Garlicky Green Beans with Cashews

Give this classic side of green beans a makeover with the added flavour and texture of crunchy cashews.

Garlicky Green Beans with Cashews


What You Need:

1/3 cup roughly chopped cashews
600g green beans, trimmed
20g butter
1 green onion, thinly sliced
1 teaspoon sour cream
2 teaspoons minced garlic 

What To Do:

Heat a frying pan over medium-high heat. Cook cashews for 3 to 4 minutes or until golden.
Meanwhile, cook beans in a large saucepan of boiling, salted water for 3 to 4 minutes or until bright green and tender. Drain. Transfer to a bowl. Cover to keep warm. 
Dry pan. Melt butter in pan over medium heat. Add onion. Cook, stirring, for 2 minutes or until softened. Add garlic, sour cream, beans and cashews. Toss to combine. Season with salt and pepper.

What to Take To Christmas Dinner with Boyfriends Family- Homemade Salted Caramel Chocolate Biscotti


Recently I was faced with the dillema of what (if anything) am I expected to bring to Christmas Dinner with my Boyfriends immediate and extended family. Now his immediate family I see often and I was reassured by them that I was not expected to contribute or buy any gifts for the large family that would all be there on the day. That I was simply to show up and enjoy the festivities, but this didn't entirely sit well with me! I'm a person who always brings wine or snacks when going to a friends dinner, if having a get together I insist providing the entire meal for people to just show up, and I always try to give or send thank you cards for kind gestures! So after a quick chat with my Mum, she suggested making some home-made cookies, shortbread, truffles, or even a pie or cake etc. Hmmm! After a quick look through my recipe books, clicking through some of my favourite food blogs; and taking into consideration that what ever I decided to make as a gift would need to be made a few days ahead and survive the drive from Sydney to Melbourne (did I not mention my Boyfriends family are interstate?!) 
Finally I found a recipe for something a little bit different, a little bit yummy, and a little bit...amazing...
Salted Caramel Chocolate Biscotti 



Makes 24



What You Need:



3/4 cup sugar
1 1/2 tsp vanilla extract
2 large eggs
1 cup self raising flour
3/4 cup plain white flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2/3 cup chocolate chips
15 caramel candies/chews (I used eclairs), unwrapped and chopped small
ground sea salt for sprinkling



What To Do:



Preheat oven to 150 degrees Celsius. Line a baking tray with baking paper and set aside. 
In the bowl of an electric mixer, beat together sugar, vanilla and eggs until white and creamy. 
In a separate bowl whisk together flours, baking soda and salt. 
With the mixer on low, slowing add dry ingredients to the wet ingredients. Mix until just combined. 
Fold in caramels and 1/3 cup of chocolate chips. 
Divide dough in half and form into two 12 inch logs on prepared baking sheet. Flatten slightly so logs are about 3/4 inch high. 
Bake for 35 minutes. Remove and allow to cool for 10 min. 
With a sharp knife, slice each log into 24 cookies. Lay biscotti down on the cut sides. Bake again for 10 minutes. Flip the biscotti over and bake for an additional 10 minutes or until biscotti are nicely dried.
Allow to cool completely on wire racks. 
In a microwave safe bowl, place remaining chocolate chips. Microwave on high for 30 seconds, stir and microwave again for 15 seconds. Repeat, microwaving for 15 second intervals until chocolate is completely melted. 
Use a fork or spoon to dip in the melted chocolate and drizzle over biscotti. Sprinkle with sea salt. Allow chocolate to set.



The Biscotti can be stored/gifted in an airtight container or glass jar at room temp for up to 7 days. Maybe add some ribbon or twine to the jar and a bottle of Moët, Verve or another nice Champagne (for the host) and sit back and enjoy that special Christmas Day.

A Few of Our Favourite Recipes

As I search for that elusive work/life balance, I have to constantly remind myself that even after what appears to be the longest work day ever, I must still try to prepare a (somewhat healthy) home cooked meal, to help me re-fuel for the stresses of my work life and it also doesn't hurt to have a gorgeous boyfriend to cook for, who so far likes anything I make (even the slightly experimental meals).

Here are a few of our favourite recipes from the past few weeks... 

Smashed Potatoes


What You Need:

12 to 15 baby red or yellow potatoes (about 1-1/2 to 2 inches in diameter) 
2-3/4 tsp. kosher salt 
1/2 cup extra-virgin olive oil 
6 cloves garlic, minced

What To Do:

Put the potatoes in a large saucepan (preferably in one layer) and cover with at least an inch of water. Add 2 tsp. kosher salt to the water. Bring the water to a boil over high heat, reduce to a simmer, and cook the potatoes until they are completely tender and can be easily pierced with a metal or wood skewer. Make sure they are cooked through but don’t overcook. The total cooking time will be 30 to 35 minutes.

While the potatoes are cooking, set up a double layer of clean paper towel on your countertop. As the potatoes finish cooking, remove them individually from the water, and let them drain and sit for just a minute or two on the paper towel..

Fold another paper towel into quarters, and using it as a cover, gently press down on one potato with the palm of your hand to flatten it to a thickness of about 1/2 inch. Repeat with all the potatoes. Don’t worry if some break apart a bit; you can still use them.

Cover a large rimmed baking sheet with aluminum foil; put a sheet of non stick baking paper on top of the foil. Transfer the flattened potatoes carefully to the baking sheet, sprinkle the minced garlic over each of the potatoes and let them cool completely at room temperature. (If preparing ahead of time, you can boil and flatten the potatoes up to 8 hours ahead. Let potatoes cool completely, and store them on the pan, lightly covered, in the fridge until read to cook).

Remove the pan of potatoes from the refrigerator, if prepared ahead. Heat the oven to 200C. Sprinkle the potatoes with about 3/4 tsps salt and pour the olive oil over them. Lift the potatoes gently to make sure some of the oil goes underneath them and that they are well coated on both sides. Roast the potatoes until they’re crispy and deep brown around the edges, about 30 minutes, turning over once gently with a spatula or tongs halfway through cooking. Serve hot.

Sweet Potato Hash Brown


What You Need:

2 cups grated sweet potatoes
1/4 cup thinly sliced onion
1/4 tsp salt
1/2 tsp pepper
2 Tbsp olive oil

What To Do:

In a bowl, combine potatoes, onions, salt, and pepper. Separate mixture into 4 patties.
In a sauté pan, heat the oil over medium-high heat, and cook potato mixture for 2 minutes on each side until golden brown.

Carrot Mash (used as a spread on Hamburgers or served as a side to quinoa coated lamp chops)


What You Need:

2 Tbsp olive oil
2 garlic cloves
6 large carrots, peeled, roughly chopped
1 Tbsp honey
1 Tbsp lemon juice
2 Tbsp chopped flat-leaf parsley
1 tsp peppercorns 

What To Do:

Place the carrots in a saucepan of salted water, bring to the boil, then reduce heat to medium and simmer until tender. Drain and mash. Add the honey, lemon juice, parsley, peppercorns, olive oil and a pinch of salt, then beat well until mixture is smooth. Serve warm. 

Individual Beef Wellingtons


What You Need:

2 scotch fillet steaks (about 180g/6ozs each)
125g mushrooms 
1/2 onion, cut into quarters
a pinch of thyme leaves
2 tsps butter
2 tsps garlic oil
1/4 cup red wine
2 sheets puff pastry
1 egg yolk mixed with 2 Tbsp milk

What To Do:

Firstly make the mushroom duxelles. In a food processor, whiz up the mushroom and onion until it is in small pieces. Heat a frypan on medium heat and add butter and garlic oil. Fry the mushrooms and thyme until fragrant and add red wine and cook this off (about 8-10 minutes total). Then drain the mushroom mix in a sieve lined with paper towels to get rid of all of the excess liquid. You can save and use this liquid at a later time as stock, in a soup, or as a sauce base.

Preheat oven to 220C and line a baking tray with non-stick paper. Take out puff pastry from the freezer and allow to thaw. Season the beef fillets with salt and pepper. In a clean frypan heat on medium to high and sear the edges of the steak only. Place the beef fillet on the puff pastry and top with the mushroom duxelle mixture. Seal it up at the ends cutting off any corners that you don’t need. If you are making this ahead of time, at this stage of the preparation you can cover these with cling wrap and refrigerate them for a few hours until needed.

Brush the top of the Wellingtons with the egg yolk and milk mixture. Pop the pastry in the fridge for a little bit to chill, as puff pastry always tastes better when baked from chilled in a super hot oven. Bake for 20 minutes until pastry is golden. Serve immediately, with or without sides.

Honey Mustard Chicken Pot Pie


What You Need:

1 Tbs olive oil
1 medium carrot, chopped
1 small sweet potato, peeled & cut into 1/2-inch cubes
1 small onion, peeled & chopped
1 stalk celery, chopped
2 Tbsp unsalted butter
2 Tbsp flour
1 Cup milk
2 Tbsp honey mustard
1 Tbsp mustard, brown or dijon would work great
1/4 Cup frozen beans or pees
1 large cooked chicken breast, cut into small cubes
salt & pepper
2 sheets puff pastry
1 egg, beaten

What To Do:

Preheat oven to 200C. In a large saucepan heat the olive oil over medium-high. Add all the vegetables except the beans & cook until the onions are translucent & the other vegetable are starting to get tender. Add the butter. Once the butter has melted sprinkle in the flour. Cook while stirring for 1 minute. Slowly add the milk, about 1/3 cup at a time, while stirring. Continue to cook & stir until thickened & bubbling. Stir in the mustard, beans & chicken. Divide the filling between two large single serving ramekins.

Cut two circles from the puff pastry sheets about 1/2 to 1-inch bigger around than the diameter of the ramekins. Gently place one circle on top of each ramekin, pressing around the sides. Brush the crust with the beaten egg. Place on a baking sheet & bake for 25- 30 minutes until golden brown (you can also place a sheet of pastry in the ramekin, as a base to the filling of the pies).

Wholemeal Sweet Potato Gnocchi


What You Need:

Gnocchi-
1 medium sweet potato
3/4 - 1 cup wholemeal flour or almond meal
1/2 tsp salt
1/2 tsp black pepper
1 tsp cinnamon
Brown Butter-
1/4 cup butter
1 Tbsp fresh rosemary
2 tsps maple syrup
salt and pepper to taste

What To Do:

Preheat oven to 200C. Pierce sweet potato with a fork, wrap in foil, place in oven, and bake for 30-40 minutes or until soft. Remove from oven and let cool slightly and unwrap.

Cut sweet potato in half, scoop out insides, and mash. Measure out 1 cup to use and save the rest for another time. Stir in salt, pepper, cinnamon, and 1/4 cup of the flour. Continue to stir and add flour until the mixture forms a soft dough (the dough might be sticky, just use more flour on your hands and surface). Place onto a surface covered in flour. Divide dough into three balls and roll each out into 1″ ropes and cut gnocchi 1″ at a time. Indent gnocchi with the tines of a fork. Repeat with remaining dough.

Bring a pot of water to a boil. Place half the gnocchi in the boiling water and let cook for 5-6 minutes. I let the gnocchi go for a minute or two after they float to the top.
While gnocchi is cooking, melt butter in a skillet and add rosemary. Continue to cook butter until the foam stops and the butter begins to brown. Remove from the heat and stir in the maple syrup, salt, and pepper. Once gnocchi are done, toss with brown butter and serve.
