Give this classic side of green beans a makeover with the added flavour and texture of crunchy cashews.
Garlicky Green Beans with Cashews
What You Need:
1/3 cup roughly chopped cashews
600g green beans, trimmed
20g butter
1 green onion, thinly sliced
1 teaspoon sour cream
2 teaspoons minced garlic
What To Do:
Heat a frying pan over medium-high heat. Cook cashews for 3 to 4 minutes or until golden.
Meanwhile, cook beans in a large saucepan of boiling, salted water for 3 to 4 minutes or until bright green and tender. Drain. Transfer to a bowl. Cover to keep warm.
Dry pan. Melt butter in pan over medium heat. Add onion. Cook, stirring, for 2 minutes or until softened. Add garlic, sour cream, beans and cashews. Toss to combine. Season with salt and pepper.
